The motivation to create The Wild Roo developed from breakfast one morning with my roommate. She just got home from work and I had made her waffles. Before even taking a bite, she posted the picture online of the waffles and told everyone how amazing they were. With her encouragement, I decided to share my ideas and The Wild Roo was born.

La Puy Lentils

3 cups dried La Puy Lentils or French Lentils, 1 medium sweet onion or yellow onion - diced, 1 large carrot or two medium - diced, 1 rib of celery - diced, 2 cloves of garlic - crushed, Palmful of Herbs de Provence, 1 bay leaf, 1 tablespoon grain of mustard, 1 tablespoon tomato paste, 2 tablespoons Vegan butter, 1 or two swirls of pot of olive oil, 1 large potato - optional, 1 jar of crushed tomatoes, Vegetable broth or water to cover beans, several stalks of kale, with the stalks removed and the leaves - chopped. Heat a 6 quart pan on low heat, add butter and olive oil, when melted and bubbly, but not burned add diced carrot, celery, onion, garlic and dried herbs De Provence. When diced vegetables are translucent, add French lentils, broth or water, bay leaf, grain mustard and crushed tomatoes. Cook until beans are soft about 20-30 minutes. When the beans are cooked, add the kale. I prefer to not cook the kale because while the beans are cooling off to store, that will wilt the kale enough for me personally. Can add to beans sooner and cook kale longer. Salt to taste.

Summer Tea

I love making a giant batch of iced tea and keeping it ready to serve for our household or guests. I also enjoy making large jars of tea for a party. It is economical and healthy. When I discovered pitcher sized tea bags, the process became even easier. My latest batch is an herbal hibiscus sangria flavor from my local grocery store. For 5.99$. In a large jar, I purchased Ball brand, water and a pitcher tea pack. To reduce sugar intake, because I love drinking tea all day, I usually use a flavored liquid stevia to add for sugar replacement. 1 large jar pitcher tea bag of choice stevia for sweetness in a large jar, fill with 1 quart of cold or room temperature water. Place pitcher bag inside jar and let it sit for at least two hours or over night for stronger flavor. Remove tea bag. In a glass add desired amount of ice, 1/2 dropper of liquid stevia and enjoy.

Veggie Pizza

Sometimes, I just want a quick meal and I have not gone shopping. For this pizza, I had store bought frozen cauliflower crust. Then I swept through my fridge for anything that might work on a pizza, as I was also tossing out no longer edible veggies, I looked at what I had left. One zucchini, purple cabbage, shredded broccoli, 1 mini bell pepper and decided it was just enough. I also had onions in my pantry. While picking out an onion, I noticed purple sweet potatoes. I decided that, they might make a delicious veggie pizza. I first started to steam the purple yams. Next I turned on the oven to 425 degrees to preheat. Then I placed the frozen cauliflower crust on a baking sheet. Thinly cut my veggies and set aside. After, the yams were cooked, I cut them into slices. I used store bought spaghetti sauce as pizza sauce, poured desired amount on frozen crust. Placed the cooked yams on first, piled up the rest of the cut veggies. At this point you could add vegan cheese or dairy cheese. I did not add any cheese. Baked the pizza until the crust was golden brown. Depending on the thickness of your veggies some might not be thoroughly cooked before the crust browns and then after pizza cooled, cut and serve.

Three Bean Salad

Freshly made three bean salad, even made with canned beans is delicious. It is a quick dish that keeps well for days in the fridge and makes weekday lunches a little easier to put together. Three Bean Salad is a classic made with Kidney beans, green beans, wax beans, onion and sweet vinaigrette. There are many variations based on personal preference and cooking styles. Three Bean Salad, 16 oz. can of kidney beans, 16 oz. can of Garbanzo beans, 1/2 lb. of frozen green beans, one small Vidalia onion or red onion - chopped, 1/2 red or green bell pepper - chopped, Dressing - 1/2 cup of white vinegar, 2 tbs. of cane sugar or sweetener, 1 teaspoon of celery seeds, 2 tbs. of olive oil. Drain and rinse the canned beans place in a bowl, mix in green beans and chopped onion and peppers. In a separate jar with a leakproof lid, shake up dressing, then pour over salad. Refrigerate for minimum of four hours before serving. Three bean salad tastes best when allowed to marinate overnight. Enjoy!

Self-Care

I have heard the term self-care for years but I was mostly thinking of self care as a luxury. I thought that taking care of myself was a little selfish. I really started to increase my self care when I decided to prioritize it over other ways I spend my time. There are several reasons why I started to prioritize my self care, such as increase my joy, improve health, improve my mood and so many other reasons. One reason I struggled with self care was because of understanding what it even means. I am still a work in progress, but what I have come to believe is that taking care of your physical and mental body. I also believe that self care is subjective to the individual. For example, I really enjoy going to farmers markets, I love the sights, smells and excitement. I love people and dog watching. I could spend hours at an open market. I realize that someone else might get stressed at the market or they think it's boring. We are all individuals, so its relative to your preferences. Here are some of my favorite ways to increase self care: practicing yoga, beauty rituals, getting a massage, taking a vacation, reading a book, How do you do self care?

Flu fighter Home Remedies

The best flu fight is prevention. Keep your hands washed, eat healthy and stay hydrated. Essential Oils Oil Diffusor - Is a nice way to disburse oils in the air. Roller Ball - to topically apply. Wellness Shots: A strong quick wellness shot recipe. 1 clove garlic, 1 thumb of ginger both finely grated, juice of 1 lemon, 1 teaspoon honey and 1/4 teaspoon of cayenne pepper. Place all ingredients into a mason jar. Add a 1/4 cup amount of hot water to mix. You can add more hot water if you want a tea or I add room temperature water so that I can drink it quickly. Herbs I really like: oil of oregano, a few drops under my tongue really helps to shorten the duration of infection. But it is a VERY HOT oil. So if this is your first time trying it, have a chaser such as juice or water if its too hot. Sleep I think its important to get at least 7 hours of sleep, especially when recovering from illness.

My Holistic Dental Experience

When I first learned that I had a cavity, I tried to heal the cavity on my own with diet changes and oral care products and improved cleaning routine. I believe that it may be possible to heal a small cavity, it's called remineralization. I have read many online blogs where people healed their cavities. I was not so lucky. I do believe that it's possible, but I was unable to keep a consistent routine. After avoiding the dentist for years, the time had come where I could no longer resist making an appointment. I was able to see the cavity in one tooth and in another tooth the decay was so big I could feel the large hole in my tooth. My childhood dentist was retired and I had to find another one that I could feel comfortable visiting. The stress of looking for a dentist almost put me in another cycle of avoidance. My parents taught me the importance of dental health, so that was the driving force to me facing that large cavity. Three consultations later, I finally picked a dentist. I was anticipating pain and a root canal. I informed my dentist that I was scared of the pain, so he made sure that I was numb before any procedures. I avoided a root canal because of the philosophy of holistic dentists. The large cavity was filled, it is yet to be determined if that method has worked. If ultimately the filling does not work, I will have to revisit the possibility of a root canal or extraction. I have a personalized dental plan to restore my teeth. Holistic dentists use the least invasive methods to restore your oral health. Suggestions from my dentist. Oil pulling, brushing twice a day and of course flossing. I am also trying a Nano hydroxyapatite toothpaste and a sonic toothbrush. I just started on my holistic dental journey. Please if you have avoided going to the dentist, use my experience as motivation to make that appointment. Floss daily, and think about all the money you can save. Oodles of Zoodles

Have you ever made spiralized vegetable noodles? Here is what happened with my first attempt. I picked zucchini to make my Zoodles. First is learning how to use the spiralizer that you own. I have an inexpensive hand crank upright model. What to do with Zoodles Replace them in favorite spaghetti recipe. Add to salads as a fun and appetizing way to eat vegetables make a vegan, raw fake out noodle dish with Zoodles. Here is what I did, first I made a plateful of Zoodles. Second I decided to not cook the zoodles and make a salad instead. I designed the zoodles to look like spaghetti, I drizzled with olive oil, dash of sea salt, raw apple cider vinegar, tomatoes and cilantro. I kept mine simple because of the actual ingredients I had in my fridge. Next time I might use them as a replacement as noodles by cooking for a few minutes and dressing with sauce. Keep them raw and make a vegan raw pesto to dress them with other vegetables that I will experiment with carrots, beets, sweet potato. Happy spiralizing!.

Watermelon Cake with ginger sauce

There are many versions of watermelon cake, just a simple internet search will show the many interpretations. I decided to make a real watermelon into the shape of a cake and here is the results. First I cut the melon in half, maybe next time, I will reserve my urge to do that since the largest piece is the center. Second, I cut off the rind. I decided to make a "layered cake" so I made even 1"-2" size slices. As seen, the largest slice first and then the next largest etc. I used fresh berries and smaller fruit to decorate. The most challenging part was how to keep the decorations on the "cake". I used tooth picks to hold fruit, but I actually do not recommend that since it creates a choking hazard. Will update, if I can find a better solution to the decorating. I created a ginger dressing to pour on the fruit. Grate up a tablespoon of fresh ginger, dice up fresh mint, juice two limes and honey to taste, start with a tablespoon and add as desired. Mix up all ingredients and pour over cake. With the extra watermelon pieces, cut into bite sized pieces and place around the cake. The results were spectacular for my family. They enjoyed eating the cake with the sauce, and now the kids request watermelon cake often.
